Grape varieties : Syrah, Grenache
Winemaking : Grenache undergoes a light maceration on the skins at 12°C, after which rosé colour juice is drawn from the vat (“saignée” method). Syrah grapes are pressed to extract rosé juice. Thereafter the winemaking process is as for the white wine.
Tasting : Rose-petal pink in colour, with a silvery-grey hue. Generous and open on the nose, with intense peach and apricot aromas. This refreshing wine reveals stone fruit flavours on the palate with subtle notes of grapefruit and almond on the finish.
Food pairing :
An excellent companion to ewe’s cheese, summer vegetables, or seafood. For example, aubergine and feta loaf, crab lasagne, or tomato, basil and mascarpone tart.
